What We Ate This Week
As part of the Eat From the Pantry Challenge, I tried to cook more this week and be a little more inventive. Here are a few of the things I made:![]()
OK, first, I used some ground turkey to make a taco casserole. This was totally by the seat of my pants but ended up being pretty good!
I browned the ground turkey and then added in some of my homemade taco seasoning and 1/4 cup water and simmered with black beans and some corn (both canned)
I took some scraps from the back of tortilla chips and layered the meat mixture, chips, cheese and some sour cream mixed with canned diced jalapeno. I then topped it with sliced tortilla sprayed with cooking spray and sprinkled with chili powder.
I was able to use up some meat and cheese from my freezer, the scraps of some chips, a few cans from my pantry and some bagged salad.
Next I used some Quaker Oatmeal pancake mix I got for FREE a while back to make some pancakes for my girls one morning.
They wanted apples in them so I peeled and diced an apple and then microwaved it for about 2 minutes, stirring in between, with some cinnamon and splenda tossed in. I then made the recipe with about 1/4 cup of flax seed added and then apples.
They loved them! They were super yummy and they both ate more than me!
Next, I wanted to use up some chicken I had in the freezer. I love cooking chicken ahead! It makes meal prep so much easier. I cubed up most of it for casseroles or to add to noodles or rice dishes.
Then I used my kitchen sheers to cut come of it into very thin strips to use for fajitas next week. I let it all cool and then put it in portions in freezer bags so they are ready to go.![]()
Finally, yesterday, I made some homemade bread knowing we were running low. I used a white bread recipe that called for about 6 cups of white flour but I used 2 cups of whole wheat flour and it turned out great. I made enough dough for two loaves and then put one loaf into a freezer bag after the first rising time to use later. ![]()
I baked the other one and it was so yummy. I love the smell of fresh baked bread.We used it this morning to make amazing french toast for breakfast!. I cut it into strips for my girls and let them dunk them in syrup for an easy to eat meal.

Make Your Own 409 Household Cleaner

“One way I’ve personally found to really save money is by making homemade cleaning solutions. If you haven’t tried making your own cleaning solutions yet, give it a try and see what you think!
It honestly took me awhile before I was willing to try this, but after I did a quick analysis of how much money I could save, I knew it was time to start making up some frugal cleaning solutions of my own! This solutions literally cost about 40 cents or so to make, as opposed to the $3 – $4 price tag you’ll often see on cleaners at the store.
Following is my tried and true “recipe” for homemade 409… just a few simple ingredients, and you’re on your way to an effective and thrifty cleaning solution!
Homemade 409
What You’ll Need:
2 Tbsp. Distilled White Vinegar
1 Tsp. Borax
1/8 cup Dawn Dishsoap
1 cup Hot Water
What You’ll Do:
Pour vinegar, borax and hot water into spray bottle.
Then continue filling spray bottle with cool water.
Add Dawn dish soap last. No need to shake.
This is a great cleaner, because the vinegar acts as a disinfectant!
If you haven’t ever made your own cleaning solutions, I’d highly encourage you to try! It’s easy to do, and you might be amazed at how much money you’ll save!”

Homemade Microwave Popcorn
Heidi over at The Frugal Girls has a guest post for us today with a great recipe for homemade microwave popcorn. While we were talking about it, she said she usually puts the butter on afterward to save the mess and be able to reuse the paper bag over and over!
“I. Love. Popcorn. Now, while there are several ways to make popcorn, I’ve found a very frugal way I wanted to share with you…
Homemade Microwave Popcorn
What You’ll Need:
- 1/3 cup Popping Corn
- 1 brown Paper Bag {lunch sack size}
- 1 piece of Tape
- Salt {optional}
- Melted Butter {optional… and delicious!}
What You’ll Do: - Pour popping corn into brown paper bag.

- Fold end of bag over, and tape shut.

- Place in microwave, and stop once there is approximately 5 seconds between pops. {you’ll just have to experiment with this part, and see what works best with your microwave}. Mine comes out perfectly when I use the “popcorn” button on my microwave.
- Transfer to a bowl and eat as is or sprinkle with salt. Now, if you’re really living it up, go ahead and top this with some drizzled butter… mmm…
- Enjoy!!

What to do with all those free Cornflakes?
I know there are tons of things you can do with these but here is one my husband pulled up tonight. We don’t really eat Cornflakes but when I could get 4 boxes at Vons and make $1.00 off them, I will buy Cornflakes:) I am giving two boxes to a friend and kept 2 for myself. We were sitting on the couch and my husband all of the sudden remembered having these cookies when he was a kid, looked up the recipe and went in the kitchen to make them. Our 5 year old was still awake in her bed and had been such a good girl all day long so I went back and got her and let her in on the fun. She was so excited to get out of the bed and be able to spend time with us by herself. A good Christmas memory made. Anyway, he got the following recipe for these Peanut Butter Cornflake Cookies HERE from Cooks.com.
PEANUT BUTTER CORNFLAKE COOKIES
1 c. white sugar
1 c. corn syrup
1/4 c. butter
1 c. peanut butter
6 c. corn flakes
Bring sugar & syrup to a boil. Remove from heat & add butter & peanut butter. Melt, pour over cornflakes. Mix together good. Spoon onto wax paper. Makes 50 cookies.

Need a Quick and Easy Last Minute Gift?
Here is a great idea that I received last year. This is super frugal and is a useful, cute and thoughtful gift to give to neighbors, teachers, friends and anyone else on your list this Christmas.
#1- Make some cookie dough- If you don’t have a favorite homemade recipe, use a Betty Crocker cookie mix if you have gotten them during the recent sales.
#2- Roll the dough into a ball and wrap in plastic wrap.
#3- Find a cute container to put it in. Just about any Christmas tin, basket, Chinese take out box or anything else you might have will do.
#4- Print out a label or hand write one saying “We thought you could use a little extra dough this Christmas.” to put with it. Include any necessary recipe directions and a Christmas greeting from your family.
You could also include a Christmas towel and kitchen utensils or give cookie cutters, frosting and other decorating items with sugar cookie dough.

Leftover Turkey Recipe
Wondering what to do with all that leftover turkey? I have a yummy recipe that is very quick and easy, I am eating it right now:)
Turkey Tetrazzini
8 oz spaghetti noodles-leave them a little undercooked
1/4 c butter
1 tsp. minced garlic
1/4 c flour
1 1/2 c chicken broth
1 c. milk
3/4 c grated parmesan
salt and pepper to taste
2 cups leftover turkey shredded or cubed
Preheat oven to 350 and grease a baking dish. Pour in al dente noodles and turkey. Melt butter in medium saucepan over medium heat. Stir in garlic. Slowly whisk in flour until smooth. Cook for 2 minutes. Gradually pour in the broth while whisking, then the milk. Turn heat to high and stir until boiling. Whisk in 2/3 c of the parmesan cheese and salt and pepper to taste and remove from heat. Pour in casserole and mix all together. Top with the remaining cheese and bake until bubble throughout and top is brown.
It would also be very easy to add a vegetable of your choice for a full meal.
This is super yummy and a great way to use those leftovers and make them into a meal your whole family will love. I did!
