Meatless Monday: Quinoa & Black Beans (Repost)

Looking for a tasty and healthy alternative to fried rice and refried beans?
Try this tasty meatless dish!
If you can’t find quinoa you can always substitute for rice, but quinoa is very nutritious.
Optionally, top this meal with some fresh pico de gallo and/or avocado slices. YUMMO!
Ingredients:

1 teaspoon vegetable oil
-
1 onion, chopped
-
3 cloves garlic, peeled and chopped
-
3/4 cup uncooked quinoa
-
1 1/2 cups vegetable broth
-
1 teaspoon ground cumin
-
1/4 teaspoon cayenne pepper
-
salt and pepper to taste
-
1 cup frozen corn kernels
-
2 (15 ounce) cans black beans, rinsed and drained
-
1/2 cup chopped fresh cilantro
Directions:
-
Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and sauté until lightly browned.

Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,

Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

Green Ghouls Punch
1/2 Gal of Lime Sherbet
2 2ltrs of Sierra Mist (or 1 12pk of cans)
1 Frozen Can of Lemonade
Optional decoration: Squeeze red gel down the inside of 12 small, clear glasses. Let dry about 10 minutes.
It’s National Chocolate Milkshake Day – Recipe
4 scoops (about 2 cups) chocolate ice cream
3/4 cup cold milk
2 Tbs Hershey’s syrup (for extra chocolate!)
2 maraschino cherries, stems removed (optional)
Whipped topping (optional)
Directions
1. Place ice cream, milk, syrup and cherries in blender container. Cover; blend until smooth.
2. Garnish with whipped topping and cherry, if desired. Two 10-oz. servings.

Leprechaun Candy or Glitter Grapes Recipe
The boys’ and I have been making these for the last few years as part of our St. Patrick’s Day celebration. They are sour and sweet at the same time…a very delicious snack!
Sour Patch Grapes (aka. Glitter Grapes or Leprechaun Candy)
Ingredients
Bunch of Green Grapes
1 pkg Lime Jello (green ) or Melon Fusion (more white)
Directions
1. Wash your grapes thoroughly, do not completely dry them – as you want them to be a little wet so the gelatin powder sticks to them.
2. Place the gelatin powder on a plate and roll grapes into the powder, completely covering. Using two spoons is helpful here. Or you can simply place the powder in a zip lock back, drop a handful of grapes in at a time and shake until covered.
3. Refrigerate for several hours.

Delicious & Easy Apple Cider Recipe!
Making apple cider is definitely a treat during Thanksgiving and Christmas. Here is a simple 5 ingredient recipe that is very delicious!!!
Ingredients:
(2) bottles of 64oz apple juice
1/4 cup maple syrup
the peel from (1) whole orange
6 cinnamon sticks
2 Tbsp. pumpkin pie spice
Directions:
Combine all ingredients in a pot over the stove. Heat and let the mixture come to a boil, then reduce heat to low and let it simmer for 1 1/2 hours. The longer the mixture simmers, the stronger the flavor of the cider.
You could also put these ingredients in the slow cooker and let them cook on low for 4-6 hours. It’s pretty hard to mess this recipe up. I hope your family enjoys this cider as much as my family does!
