Freezer Meals: Sweet & Sour Chicken!

Trying to figure out a recipe to use and twist into a freezer meal was a little tricky, but I think we scored a winner! We’ll see what the total verdict is when my husband tastes this recipe, but it smelled delish just putting the ingredients together!
Ingredients:
2/lbs chicken, any cut I went with bone-in because it’s on sale this week at Smart & Final
1 red bell pepper, chopped I made them big chunks since it’s cooking in the crockpot
1 green bell pepper, I didn’t have green so I used 2 reds
1 onion chopped
3 garlic cloves, 1 minced 2 chopped
1/2 tsp ground ginger, I used fresh
1 Tbsp. soy sauce
1/4 cup brown sugar
1/4 cup vinegar, I went with seasoned rice vinegar but any kind will do
2 Tbsp. corn starch
1/4 cup water
1 (20oz) can pineapple chunks
Directions:
Put your Ziploc freezer bag in a bowl like so. This helps it stand up better.
Drain pineapple juice into a small mixing bowl, and put the pineapple chunks in a Ziploc bag.
In the mixing bowl with juice whisk sugar, soy sauce, vinegar, salt, ginger, 1 clove minced garlic, cornstarch, and water. Set aside.
In Ziploc freezer bag add chopped peppers, onions, garlic, and chicken, then pour sauce over the chicken.
**Note: I always take the skin off my chicken, this makes the dish lower in fat. Also, I like cooking with the bones because I think it adds more flavor!
Now just tape the bag of pineapple to this bag like so and freeze.
On the day of cooking: that morning take the bag out of the freezer and let it set on the counter for about an hour. Place the bag of pineapple aside, and dump the other bag filled with chicken, sauce, and veggies in the crockpot. Let this cook on low for about 6-8 hours or until chicken is cooked through. Take chicken out, and discard the bone, if you use bone in meat, and chop the chicken into 2 inch pieces. Add back to the crockpot with the pineapple. Stir it all together and allow the pineapple to heat through before you serve. Serve over rice and dinner is done!
**You can add plenty more veggies if you’d like, I think half way through cooking I’ll add some frozen peas and green beans to the crockpot. Enjoy and let me know what you think!

This was amazing! I didn’t have time to do a crock pot meal or the freezer style, but it turned out fabulous in the electric skillet!
