Freezer Meal: Apple Cider Chicken!
Hello

With all these chicken and apple deals this week and last week, we should all be making this for our freezers! There are 2 ways this recipe can be prepared, I will share both.
Ingredients:
2 tablespoons butter
4 boneless, skinless chicken breasts (about 2 pounds)
Salt and freshly ground black pepper
1/2 Vidalia onion, chopped
1 or 2 apple peeled, cored and sliced into 1/4-inch wedges (I like more apples)
3 cloves garlic, minced
2 teaspoons dried thyme
2 tablespoons all-purpose flour
1 1/2 cups apple cider or juice will work fine
1/2 tsp. cinnamon
Directions:
Idea 1: Add all ingredients except butter to a freezer bag and freeze until ready to use. On the day of cooking, let freezer bag sit at room temperature for 30-45 minutes, then dump everything into a slow cooker and cook on low 6-8 hours or on high for 4-6 hours.
Idea 2: Mix all ingredients together except for butter and chicken, freeze. On the day of cooking melt butter in a skillet, season chicken with salt and pepper, then sear on both sides until chicken is golden brown. Take chicken out of skillet and set aside. Add the rest of the ingredients from the freezer bag to the sauté pan and cook until apples and onions are soft. Add chicken back to the skillet and add an additional 1/2 cup apple cider or juice, bring to a boil, then cover skillet with a lid and let this simmer on low until chicken is cooked completely through.
Thanks, Food Network for a great recipe!
