Freezer Meals: Whole Cooked Chickens For Casseroles
Hello

This week there are some pretty good sales on whole chickens. Foods Co. is selling them in twin packs for $.77/lb and Smart & Final is selling Foster Farms whole chickens for $.79/lb. One day try this technique on cooking your chickens and you will have more than enough shredded chicken for casseroles, wraps, chicken salad, and more!
Bring 2 whole chickens and enough water to cover to a boil in a large stockpot. Add 2 celery ribs, 2 carrots, 1 onion, and 4 garlic cloves. Reduce heat; cover and simmer about 40 minutes. Remove chicken, and discard vegetables, reserving broth. Remove chicken from bones, and shred. Place 2 cups shredded chicken in labeled quart-size freezer bags. Seal and freeze. Strain broth, cool, and refrigerate. Freeze broth in airtight containers or freezer bags for soups and other recipes.
I actually have done this before and it makes great shredded chicken. I love having pre-cooked shredded chicken in my freezer. It makes for easy meals and hardly any prep time is involved. You could take this one step further and go ahead and make some casserole recipes and freeze for an even easier weeknight meal. The possibilities are endless!
One of my favorite chicken casserole recipes is Chicken Broccoli Bake, make sure you try this, it’s SOOO GOOD!!! Remember with freezer cooking you make casserole as usual except freeze the casserole before baking, then just bake the day of eating.
I got this recipe and many other tips from Southern Living: Easy Freezer Meals, so make sure you check them out.
